Make this as skewers or as a one pan dish serve along a side salad and call it a day.

Creole Chicken Skewers
2 Lbs. Boneless Skinless Chicken Thighs
1 Onion
1 Red Bell Pepper
1 Green Bell Pepper
1 Tbsp. Creole Seasoning
1 Tbsp. Olive Oil
Cut chicken into one inch chucks, add in the oil, and creole seasoning, toss until well combined.
Cut your peppers and onion into one inch pieces.
Skewer your chicken, onion, peppers, and grill for 8-10 minutes or until your chicken is fully cooked.
If you want to make your own creole seasoning below is my version of it. Make the batch and store in a closed container.
Creole Seasoning
2 Tbsp. Smoked Paprika
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
1 Tbsp. Oregano
1 Tbsp. Basil
1 Tbsp. Thyme
1 Tsp. Black Pepper
1 Tsp. White Pepper
1 Tsp. Cayenne
2 Tsp. Celery Salt
Mix spices in a bowl and store in a spice container.
