Greek Chicken Soup

This is a healthy tasty soup perfect for these colder days.
 
Let's get started.
 
2 Chicken Breast
1 Onion, diced
4 Carrots, diced
4 Stalks Celery, diced
4-6 Cloves Garlic, minced
1 Tsp. Dried Oregano 
1 Bunch Parsley, finely chopped
1 Bunch Dill, finely chopped 
2 Lemons, juiced
2 Eggs 
1/2 Cup Orzo
2 Tbsp. Chicken Bouillon  
Freshly Ground Black Pepper 
1 Tbsp. Olive Oil
 
Cut your chicken breast into 1/2-inch pieces, season with salt, pepper, and oregano. 
 
In a soup pot add in the olive oil, sear your chicken on all sides. Then add in the onion, carrots, celery, garlic, and sauté for 2 minutes. Add in 6 cups of water, chicken bouillon, bay leaves, and bring to a simmer. 
 
Once simmering add in the orzo and cook for 15 minutes. In a small bowl stir the eggs and lemon juice together. Slowly add one ladle of broth into the egg mixture making sure to whisk constantly.
 
Turn off heat to the soup, add in parsley, dill, and lemon egg mixture. Taste and add salt and pepper if needed.
