This is a super flavorful dinner. To make this even easier I use a store bought rotisserie chicken and shred it. This easily serve 8-10.

Chicken Tortilla Soup
1 Rotisserie Chicken
1 Onion, finely chopped
1 Red Bell Pepper, finely chopped
2-3 Jalapenos, seeded and finely chopped
4-6 Cloves Garlic, minced
Two 15 Oz. Cans Fire Roasted Tomatoes
2 15 Oz. Can Black Beans, drained and rinsed
1 15 Oz. Can Corn, drained and rinsed
2 Packets Mild Taco Seasoning
2 Tbsp. Chicken Bouillon Powder
8 Cups Water
1 Tbsp. Oil
1 Tbsp. Butter
Toppings
Fried Tortilla Strips
Avocado
Limes
Cilantro
Sour Cream
In a Dutch oven add in the oil, butter, onion, garlic, bell pepper, jalapenos, taco seasoning, and sauté for 4-5 minutes.
Add in the fire roasted tomatoes, beans, corn, chicken bouillon, water, shredded chicken. Cover and bring up to a boil, then reduce to a simmer.
Allow to simmer for 25-30 minutes. Taste and add additional salt and pepper if needed.
Serve, top with fried tortilla strips, avocado, cilantro, lime juice, and enjoy.
