This can be served with some garlic bread and a side salad.
Cajun Sausage Pasta
1 lb. Linguine
1 Lb. Mild Italian Sausage Links
4-6 Cloves of Garlic, minced
1 Onion, thinly sliced
1 Red Bell Pepper, thinly sliced
1 Green Bell Pepper, thinly sliced
2 Cups Heavy Cream
4 Oz. Cream Cheese
1 Cup Parmesan Cheese, grated
1 Tbsp. Cajun Seasoning
1 Tbsp. Olive Oil
1 Tbsp. Butter
Bring a large pot of water to a boil add in a good pinch of salt and cook pasta until al dente about 8 minutes.
In a large skillet add in the olive oil and the sausage links. Cook for 10 minutes, flip and cook for an addition 10 minutes. Remove from heat and let sit for 5 minutes. Then thinly slice.
Meanwhile in the same skillet add in your peppers and onions and sauté for 3-4 minutes. Remove from skillet and set aside.
In the same skillet add in the butter and minced garlic, sauté for 1 minute then add in the Cajun seasoning and sauté for an additional minute.
Add in the heavy cream and stir. Bring to a gentle simmer and add in your cream cheese and mix until well incorporated. Add in half of your Parmesan and mix for 1-2 minutes. Taste and add more Cajun seasoning to your liking.
Stir in the sausage, peppers, onions, pasta and remaining Parmesan cheese. Allow to cook together for a couple of minutes.
Serve and enjoy.
