Shepherds Pie

You can use ground beef, ground chicken, or ground turkey in place of the lamb in this recipe and it would still come out so good. 

Note: I used store bought mashed potatoes to make this even easier and faster. Feel free to make homemade if you wish to.

Shepherds Pie
1 Lb. Ground Lamb
1 Onion, diced
4-6 Cloves Garlic, minced
6 Sprigs Fresh Thyme
2 Sprigs Fresh Rosemary
1 Tbsp. Worcestershire Sauce
2 Tbsp. Tomato Paste
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
1 Cup Frozen Peas & Carrots
1/2 Cup Frozen Corn
1 Tbsp. Vegetable Oil
1 Tbsp. Butter
2 Tbsp. All Purpose Flour
1 Cup Beef Broth

Mashed Potatoes, cook according to package direction
Topping: Crispy Fried Onions

In a pan add in the vegetable oil, lamb, onion, salt, pepper, thyme, rosemary, and sauté for 4-6 minutes. Then add in the butter, garlic, tomato paste, flour, and sauté for an additional 2 minutes. 

Add in the beef broth, Worcestershire sauce, frozen peas, carrots, and corn. Stir and allow to come to a simmer. Once simmering turn off heat and set aside.

Pre-heat your oven to 350 degrees Fahrenheit. And butter a pie pan. Place pie pan on top of a baking pan so it can catch any spillage.

Pour lamb mixture into a pie pan, top with mashed potatoes, and bake for 25 minutes. Top with crispy fried onions and bake for an additional 10 minutes.

Remove from the oven and allow to cool slightly. Serve and enjoy.
