Chicken Caesar Pasta Salad

Another pasta salad. I can't get enough of them, you can save time by using a rotisserie chicken and store bought Caesar dressing.

Let's get started.
 
Chicken Caesar Pasta Salad
4 Chicken Breast, cut in half horizontally 
2 Tsp. Kosher Salt
1 1/2 Tsp. Freshly Ground Black Pepper
1 Tsp. Garlic Powder
1 Tsp. Onion Powder  
1 Tbsp. Worcestershire Sauce
2 Tbsp. Extra Virgin Olive Oil

Pasta Salad
1 Lb. Rotini Pasta, cooked according to package directions 
1/2 Cup Shaved Parmesan 
1/2 Cup Caesar Dressing  
Freshly Ground Black Pepper
1 Romaine Heart, roughly chopped
 
In a bowl add in the split chicken breast, salt, pepper, garlic powder, onion powder, Worcestershire sauce, olive oil, and toss until the chicken is well coated.

Preheat your grill or grill pan and grill the chicken for 6-8 minutes on each side or until fully cooked through. Remove from heat and allow to rest for 5 minutes. Then cut into bite sized pieces 
 
In a large bowl add in the drained and cooled pasta, chicken, lettuce, Parmesan cheese, Caesar dressing, and a sprinkle of freshly ground black pepper. Toss to coat. Add more dressing to your liking.
 
Serve and enjoy. 

 
Caesar Dressing 
4 Anchovy's, smashed to a paste
2 Lemons, zested and juiced
1/2 Cup Mayo
5 Tbsp. Dijon Mustard
1 Tbsp. Olive Oil
4 Oz. Parmesan Cheese, grated
Salt
Freshly Ground Black Pepper
 
Add all of the ingredients into a bowl; mix and use when ready.  Or feel free to use your favorite store bought dressing.
