Banana Waffles

Waffles > pancakes for us. However, this batter can be cooked on a skillet and be turned into pancakes.

Let's get started.

Banana Waffles
2 Large Eggs
1 1/2 Cup Buttermilk
3 Bananas
1/4 Cup Granulated Sugar
3 Tbsp. Butter, melted + more for pan
1 Tsp. Vanilla Extract
2 1/2 Cups All Purpose Flour
2 1/2 Tsp. Cinnamon
2 Tsp. Baking Powder
1 Tsp. Baking Soda
1 Tsp. Kosher Salt

In a large bowl add the bananas and mash then add in the eggs, buttermilk, sugar, butter, vanilla, and mix until it's well combined. 

Sift in the flour, cinnamon, baking powder, baking soda, and salt into the bowl and mix. Let batter sit 5-10 minutes.
 
Preheat your waffle iron. 

Spray your waffle iron with nonstick spray, add in the waffle batter, and cook the waffles until full cooked through. Let the waffles rest on a wire rack as the other waffles cook.

Serve alongside with butter, maple syrup, powdered sugar, or any of your favorite toppings.
