Roast Basil Chicken

I had some extra basil lying around and made this on a whim. It was so good I just had to re-share it here. Serve with a side salad, baked potatoes, or corn on the cob. 

Let's get started. 

10 Chicken Thighs
6-8 Cloves Garlic
1 Tsp. Red Pepper Flakes
1/2 Cup Basil
2. Tsp. Thyme Or Italian Seasoning
2 Lemons, zested and juiced
3 Tbsp. Olive Oil
1/2 Cup Butter, Softened 
Freshly Ground black Pepper

Season chicken with salt and pepper on both sides. Set aside.

In a small blender add in the garlic, salt, red pepper flakes, basil, thyme, lemon zest, lemon juice, shallot, and olive oil. Blend until smooth. Place 1/2 of the basil mixture into a bowl and set aside.

Place chicken into a large bowl and pour basil mixture over top. Toss until fully coated. Allow to marinade for 30 minutes.

Preheat your oven to 350 degrees Fahrenheit.

Bake for 45-50 minutes or until the internal temperature of the thickest part of the chicken reads 165 degrees F.

Remove from the oven and let rest for 3-5 minutes
